The Easiest Chicken Pot Pie

I don’t share a lot of recipes here on my blog, but I thought it would be fun to start sharing some of our family’s favorites every now and then. As a mom, I’m always looking for meals that are quick, easy, and that everyone will actually eat!

With back-to-school season here, simple dinners are a must. This recipe comes together with just a few ingredients, takes very little prep, and is the perfect comfort meal after a busy school day. I hope your family loves it as much as ours!

Chicken Pot Pie

Ingredients:
1 lb. boneless, skinless chicken thighs
1 can cream of chicken soup
1 cup milk
ยฝ onion, diced
1 bag frozen mixed vegetables (I like the one with carrots, lima beans, corn, green beans, and peas.)
1 can refrigerated biscuits
Butter
Salt
Pepper
Garlic powder
Dried thyme

Directions:

I like to make this recipe using two pans on the stove and then combine everything at the end. You can absolutely make it all in one pan, but I think it comes together a little faster this way.

In the first skillet, cook the chicken over medium heat. Season generously with salt, pepper, garlic powder, and a sprinkle of thyme. Once the chicken is fully cooked, cut it into bite-sized pieces (or shred it if you prefer).

While the chicken is cooking, sautรฉ the diced onion in butter in a second skillet until softened. Add the frozen vegetables and cook until heated through.

Stir in the cream of chicken soup and milk, mixing until everything is smooth and creamy. Let the mixture simmer for a few minutes until it begins to thicken.

Add the cooked chicken to the vegetable mixture and stir everything together. Season as needed.

Meanwhile, bake the biscuits according to the package directions.

To serve, spoon the creamy chicken mixture onto a plate and top it with a warm biscuit (or split the biscuit in half and spoon the filling inside).

Tip: If I’m in a hurry, I’ll grab a rotisserie chicken from the grocery store instead of cooking the chicken myself. I just shred it up and add it to the vegetable mixture. It makes this recipe even quicker and is perfect for those extra busy school nights.
