As a former Pre-school/ Elementary teacher I love celebrating all the little holidays and occasions!

When I was a teacher I would look for any fun day coming up to try and make the classroom that much more fun! So of course why not do this in my own home?!
The other day I decided to make some fun yummy Earth day cookies. If you follow me on Instagram you know I tried to make rainbow cookies back in March and they were a total fail! But these, these are yummy!
I changed the recipe I was using and I’m totally satisfied!

We started off baking with turning on A Bug’s Life. I love to put on a movie in the background especially if I can theme it with what we’re doing and to me A Bug’s Life is pretty Earth Day-ish.
Pre-heat the oven to 375° or whatever temperature your mix says.
I lined a baking sheet with parchment paper, that’s just my personal preference when baking sugar cookies. Basically prepare your baking sheet the way you like to. 🙂 And let’s get started!

Make sure you really let the butter sit out and soften. I wish I would have let mine get even softer. Probably a couple of hours would have been good.

Next mix the egg and butter together. Then add the sugar cookie mix. I mixed with my hands until completely combined.

Now split the dough into two seperate bowls and add food coloring. I started by adding three drops and that was definitely not enough to color the dough so I just kept adding till I liked the color I saw. 🙂

Take a small piece of green and a small piece of blue and combine them. We rolled them in our hands to make a ball. Make sure you don’t do this too forcefully, you want the colors to stay seperate.

Place in oven for 8-10 minutes or whatever the recipe on the bag calls for.

And boom! You have beautiful Earth Sugar Cookies!

Earth Day Cookies
Ingredients
- 1 bag sugar cookie mix
- 1 stick butter
- 1 egg
- blue food coloring
- green food coloring
Instructions
- Follow the directions on the Sugar Cookie mix.
- Make the sugar cookie dough.
- Split the dough in half.
- Drop green food coloring in one half of the dough and blue food coloring in the other half.
- Mix the doughs seperately until the dough reaches the color you prefer.
- Take about 1/2 tsp of blue dough and 1/2 tsp of green dough and roll them into a ball together. Be careful not to overmix the two colors.
- Bake as directed on package.
