Caroline has been asking to eat pancakes for breakfast in the morning lately.
We love to eat pancakes on Saturdays and sometimes throughout the week but I’m not always the biggest fan of breaking out the griddle and making new pancakes each morning.
A lot of the time we make a batch and reheat the pancakes later that week and they’re delicious. But I was thinking about how much Caroline loves to eat mini muffins and how easy they are for her to grab and munch away on so I thought why not try out some mini pancake muffins?!
They were a hit, my friends! She loved them! They’re so easy to reheat, dip in syrup, and eat up! And let me tell you they’re the easiest things to make!
So go grab your pancake mix, your muffin pan, and some delicious toppings, the EASIEST pre-made breakfast is coming your way!
First preheat your oven to 350°. Spray your muffin pan with a non-stick spray. I ran out of muffin liners or I would have used those!
Next, make your pancakes the way you normally would. Pour into muffin pan. Add toppings. We added chocolate chips!
Now bake for about 15-20 minutes or until they look done.
We put ours in a container in the fridge. We’ve been loving having them ready to reheat in the morning for an easy quick breakfast or side to our breakfast.
Mini Pancake Muffins
- 1 batch of your regular pancake mix or more
- Pre-heat oven to 350°. Spray pan with non-stick cooking spray.
- Mix your pancake mix the way you would regularly do so.
- Pour the batter about 3/4 of the way up each cupcake.
- Add toppings like chocolate chip cookies, sprinkles, or fruit.
- Bake for 15-20 minutes. Keep an eye on the batter to see when it's done.
- Let rest for 10 minutes.
